Years ago, when I spent my time at home with an infant and a toddler, I became very good friends with my Instant Pot. On so many days it saved dinner. One of the easiest recipes I came up with was a take on chicken tortilla soup, except that there technically are no tortillas in it. I just throw a bunch of broken tortilla chips on top when the soup is finished. Everything for this soup happens quickly which I love, and you can top it with whatever you like … cilantro, sour cream, jalapenos, salsa, etc!

CHICKEN TORTILLA SOUP

Ingredients:

  • Spice mix
    • 1 tsp. smoked paprika
    • 1 tsp. garlic powder
    • 1 tsp. onion powder
    • 1 tsp. ground cumin
    • 1 tsp. dried cilantro
    • 1 tsp. Kosher salt
    • 1/2 tsp. chili powder
    • 1/2 tsp. lemon pepper
    • 1/4 tsp. red pepper flakes
  • 1 pound of chicken breasts (sometime I use chicken tenders!)
  • 1 tablespoon olive oil
  • 1 15 oz. can black beans, rinsed and drained
  • 1 15 oz. can Great White Northern beans, rinsed and drained
  • 1 15 oz. can crushed tomatoes
  • 4 cups chicken stock
  • Topping Options: Cilantro, Sour Cream, Salsa, Shredded Cheese, Siracha, Lime, Jalapenos

Directions:

  1. Turn on “Saute” setting of Instant Pot.
  2. In a small ramekin, mix together all of the spices.
  3. Season both sides of the chicken breasts with a bit of the spice mix, the rest will be used for the soup.
  4. Add olive oil to Instant Pot.
  5. Add chicken to Instant Pot and sear both sides, cooking for 1 – 2 minutes on each side.
  6. Once seared, cover chicken with crushed tomatoes, black beans, white beans, chicken stock and rest of the spice mix. Mix.
  7. Cover soup with Instant Pot lid, making sure everything is locked and sealed. Set Instant Pot to “Pressure Mode” and a cook time of 7 minutes.
  8. Once soup is done, allow pressure to release on its own. When the Instant Pot is safe to open, remove chicken breasts, shred chicken with two forks, and return to pot. Mix.
  9. Adjust seasoning to your liking and top with crushed tortilla chips and whatever else you like!

*Note: This soup isn’t super spicy, feel free to increase the red pepper flakes! Also, I’m not the biggest fan of onions or chilies, but I’m sure this soup would be wonderful if a bit of diced onion was sauteed before adding the chicken breasts, or by adding in a can of Rotel!
